  1. Dice the tomatoes and the onion and put into a medium-sized bowl.
  2. Roughly chop the cilantro (you can use the stems as well). Add to the bowl.
  3. Juice the lime and add to the veggie mixture.
  4. Add a pinch of salt, then mix your pico de gallo. Serve immediately or let it sit in the fridge for 1-2 hours.
